How are cavities between teeth treated?

A month ago, my dentist detected cavities between two molars on my X-rays. Both molars have silver fillings in the biting surfaces already from cavities I had as kid/teen some 10-15 years ago – dentist have earlier told me those fillings are well functioning and should possibly be lasting for another 10-15 years. Before I schedule for having the between-molars cavities fixed I am curious to know about the treatment. How will the dentist get in between my teeth and remove the cavities? Will dentist also need to remove the existing fillings despite they are well functioning? If he removes the existing fillings then I will need larger two-sided fillings. Are such two-sided fillings to be preferred over two smaller fillings and are the two-sided fillings strong and long lasting solutions for my molars?
