Are you getting all your greens this winter?

At this time of year we don’t eat many salads, therefore our consumption of valuable green leafy vegetables is lower. These vegetables provide a valuable source of folic acid, Vitamins A, C and K and the mineral Potassium.

Ensure that you include leafy vegetables such as spinach or baby spinach in your weekly meals.  Good old creamed spinach can be made at home with low fat evaporated milk, chopped mushrooms and onion for a delicious dinner vegetable.  You can also include baby spinach in stir-fries, stews, wraps, and roasted vegetable mixes.
