Got vegetarians coming to the braai this weekend? Panic not.
We’ve got you covered with these easy, cheesy vegetable wraps – that’s right, a
wrap on the braai. Get set to impress.
Rub broccoli, sliced butternut and onion with salt, pepper
and olive oil and grill lightly on all sides over smouldering coals for 8
minutes. Set aside to cool. Cover one side of a soft flour wrap with a thin
layer of mascarpone. Place the grilled veggies, along with crumbled blue cheese
and rocket, in the middle of each wrap (be generous!) and roll up tightly.
Return to the grill and brown lightly. Slice at an angle and serve with pesto.
