Insulin resistance

My doctor just diagnosed me with insulin resistance with an insulin level of 11. I'm not overweight (5'6 and 148lbs) and my cholesterol levels are normal. I have a long list of health problems: •Endometriosis •Polycystic Ovarian Syndrome •Interstitial Cystitis •Hashimotos Disease •Hypothyroidism •Degenerative Disk Disease •Syringomyelia/Syrinx T-9, 10, 11 •Gastroparesis •Gastritis •Diverticulosis •Esophageal ulcer •IBS •GERD/Acid Reflux •Migraines •Chronic Fatigue Syndrome •Arthritis •Anxiety/Depression •Kidney Stones My doctor wants me to cut out all sugars and carbs. Sugar I can do, I have no issue with that. But because I have Gastroparesis carbs are the one thing my stomach can digest easily. I can't have fresh fruits and veggies (veggies have to be cooked until they're literally falling apart in order for my stomach to be able to digest them), no pork or red meat, and no fiber. Any suggestions? Should I be on any medication at this point? Could my other health issues be causing this?

Your other medical problems(PCOS) may be causing the raised insulin, which is only marginally raised.In terms of diet, I would suggest a dietician to assist with food choices.You don't need to be on any medication for the insulin
