White or red meat

Dear Dietdoc

Is OSTRICH regarded as a white or red meat and PORK- a white or red meat?

Dear Rens
Ostrich is actually regarded as white meat, despite the fact that it has such a deep red colour. It is low in fat, saturated fat and cholesterol. Pork is also more white than red meat, with low fat values if you cut off all the visible fat - this is because in contrast to beef and mutton, pork does not have 'marbling' (small fat globules spread throughout the meat).
