The 'terrible toddler' stage can be most frustrating esp when they refuse to eat, but from what you say it is apparent that your lad is actually quite a sophisticated eater and is getting quite a lot of variety in his diet. As regards eggs, 7 a week is rather much so try giving him fish fingers and toast for breakfast or yoghurt with fruit, just as a variation. It is possible that the diluted fruit juice he is drinking throughout the day could be suppressing his appetite. Dilute the juice even more because it is important to remember that small children have a small stomach capacity and they easily feel full. He is certainly not underweight because the average weight for 3-year-olds is 13 kg, so be careful that he does not gain too much weight (again the fruit juice could contribute). Rather let him drink clean boiled and cooled water or rooibos tea (without sugar) if he consents. Small children also use food refusal as a means of gaining control of adults, so if you don't react when he insists on eating only one food at a time like the eggs, he may tire of this ploy because he is not getting a reaction from you.
