Low Gi foods

What is that gets done to bread to make it Low GI, or how do the ingrediants differe from normal bread

Dear JP
Normal wheaten brown or white bread has a high GI. The addition of protein (soy flour), nuts, seeds or dried fruit will lower the GI of wheaten bread. Bread baked with 100% rye flour also has a low-GI. If you check on the labels of products like low-GI bread or seedbread, you will see that there breads contain some or all of the ingredients listed above.
