Because fruit has a relatively high sugar content, it may start fermenting after 2-3 days even when stored in the fridge. Smell the fruit salad and if you smell a yeasty or sour smell, don't eat it. It is in any case always better to make fruit salad in smaller portions and to eat it immediately as the valuable nutrients like vitamin C will be drastically reduced by storage. Vit C is destroyed when exposed to air, high temperatures and when the cells of the fruit are broken - things that happen when you make fruit salad and store it for longer periods even in the fridge.
