Cos lettuce

Cos lettuce is linked to a reduced risk of cancers. It is also a good source of folate and helps to protect against age-related macular degeneration.

The dark outer leaves are the richest in carotenoids. Cos lettuce must be refrigerated and eaten as soon as possible, as the vitamin C content reduces the longer it is kept.

These can be eaten freely as they have a low calorie content.
