Which fats are healthy?

We need a certain amount of fat in our diets since some fat is necessary for good health. Which fats can we safely eat?

We can eat any of the following oils in moderation, as long as they haven't been hydrogenated (keep an eye on those labels):

  • Peanut oil
  • Canola oil
  • Olive oil
  • Sunflower oil
  • Corn oil
  • Flax seed oil

Not only do these oils contain mono- and polyunsaturated fats, they also contain healthy omega-3 and omega-6 fatty acids.

With careful attention to detail it is entirely possible to substitute these oils in recipes which call for butter or solid (brick) margarine.
