Saturated fats and trans-unsaturated fatty acids can raise one's cholesterol levels.

Most experts suggest a step-wise approach to lower fat intake, aiming to use a combination of diet and other lifestyle measures to reduce LDL cholesterol to less than 3,0 mmol/litre.

A step-1 diet has 30% of its daily calorie requirements from acceptable fats, whereas a step-2 diet obtains 25% of its energy from fats. If an acceptable level of cholesterol or triglyceride cannot be achieved using either of these steps, a step-3 diet may be introduced in which only 20% of energy comes from fat.

This is generally only introduced under the supervision of a dietician, since it can have unwanted side effects. Other special diets are available for specific cases.
