Take action:
Refrigerate hot foods within two hours after cooking (if the food has been sitting out longer than that, throw it out); divide leftover foods into shallow containers for rapid cooling; slice foods such as pasta or meat dishes into serving-size portions, so the food will be thoroughly chilled; if you have time, keep labels and a pen in the kitchen and date leftovers; use cooked leftovers within three to five days.
