Opt for canned food products – contrary to popular belief, the vitamin and mineral content of these foods aren't sub-standard where most nutrients are concerned; stock up on long-life or powdered milk (prepare just enough for one meal if you don't have cooling facilities); shop for small quantities of fresh produce daily; invest in a good 'potjie' and prepare easy, nutritious meals over the coals; if you're worried about your family's vitamin intake, use supplements for the period of the power outages, paying particular attention to vitamin C and the B-complex vitamins if you've switched over to canned products.
