Nothing tastes quite as good as junk food, American consumers say.
If you're hoping that science will one day figure out a way to make junk food healthy, you might have a long wait. In the US, taste rules when it comes to using less-fatty man-made compounds in snack foods. So far, Americans prefer what they consider the tastier, fatty versions.

Food manufacturers are unsure why products with fat substutes (like Olestra) don’t sell. This transpired at a convention of food scientists in New Orleans.
A poll done by the companies in 2000 showed that almost half of all Americans are concerned about eating too much fatty food. Yet, such products as Wow! chips with Olestra and low-fat Snackwell cookies have had disappointing sales.
The answer might be simple: a product won't sell if consumers don't like the taste. And low-fat cookies and fat substitutes don’t taste quite as good as fatty products. - (HealthScoutNews)
