 Dealing with leftovers
Leftovers needn't be a waste. In fact, there's nothing like a piece of leftover pizza the following day, right? But take care when storing and eating leftovers.

The general rule is to keep foods in the temperature "danger zone" for as short a time as possible. "Mild" temperatures of between 8 and 60 degrees Celsius creates an ideal environment for bacteria to grow in.

So, don't leave hot leftovers standing on a warm surface or in a hot pot for too long. Get the food into the fridge or freezer as soon as possible - and eat the leftovers as soon as you can.
