Thank you for your kind words, which have made my day! The SA Glycemic Index & Load Guide does not specify different toasted breads, but it does list Melba Toast as a high-GI food with a GI of 70. Melba Toast is made of white bread. I do, however, not believe that toasting breads such as low-GI seed or wholewheat bread, will increase the GI dramatically. If you eat low-fat cottage cheese, or baked beans and other pulses, or cheese or a boiled egg or thinly sliced meat or fish, or peanut butter on the bread, you will also lower the GI of the meal.
