Dear Bibi
You don't mention why you need to eliminate red meat? Is this due to reducing fat and cholesterol intake or do you suffer from gout? If you need to reduce your fat and cholesterol intake then ostrich (without the skin), and pork (trimmed of all visible fat) can be used in a low-fat, low-cholesterol diet. If you suffer from gout then you would need to also reduce your intake of pork and ostrich as both meats also contain purines (the compounds implicated in gout).
