In you response to the enquiry about " Pap"  you said " ....you can further lower the GI of the pap by adding half a cup of low-fat milk or low-fat sour milk."  Do you mean add milk to cook with or eat together with?

Is it true that it is fattening?

You can use the milk to cook the maize meal if you like or you can eat the cooked maize meal with half a cup of the low-fat milk or sour milk like most other porridges. The addition of milk, which is a high-protein food lowers the GI of any carbohydrate. I am not sure what food you are asking about in regard to 'fattening', the pap, the milk or the pap and milk???
