lowering the GI of cookies

I hope I can contact you with the following: My 10-year old wants to make cookies to sell on entrepreneurs day, and asked me for an easy recipe. The easiest I could find was an old recipe of margarine+castor sugar+flour, mixed and rolled in little balls and baked in the oven. What I would like to know is whether it would be possible to lower the GI of this recipe by adding something or replacing one of the ingredients, while keeping it tasty and "easy to make"?
