force of work

please advise,if you sign a contract to do one work and suddenly your employer piles more work on you with out any remuniration is it fair in the workplace.

I have signed a contract as an Office Administrator but now i also wash dishes at the office, our cleaning lady comes only once a week. so when she is not around me and the Bookeeper do the disheses! no pay for that...
