Dear Stacey
The SA Heart Foundation advises that adult South Africans should only eat 4 eggs per week. You can of course have additional egg whites, which will not expose you to high cholesterol intakes. Vegetarians using a lacto-ovo-vegetarian diet can eat slightly more eggs per week (about 6 per week), because they don’t have a high cholesterol intake from other animal products and egg yolk is a good source of iron and eggs are a good source of high quality protein.

I think the maximum should be 3 to 4. If you want a bigger ommelete use one whole egg and 2 more egg whites as the albumin is lower in cholestrol and fat. Make your eggs go further by adding mushrooms, spring onions green peppers and tomatoes to your ommelette.
