dysphagia

hello,
my brother has a tracheostomy due to a muscular dystrophy.
he has had a barium swallow test which went ok.
a speech therapist suggested a powder to thicken some food items and a dietician recommended sibusiso and nutren fibre.
could u please suggest ways to blend food and what ingredients are best to blend?
we are ok with blended chicken, sausage and cottage pie.
we tried pasta and fish but it didnt get very well.
i really want my brother to get some tasty food of a good consistency.
thank you

Dear Hope
It is difficult to suggest what foods you could blend and then mix with the thickeners because this also depends on the types of food your brother is prepared to eat. You will have to experiment at this stage to determine the following: a) What types of food he can swallow - keep in mind that the best consistency is something like a medium-thick porridge - not too thin and not too thick either. b) Foods that are too thick and stodgy won't be easy to swallow and you will need to dilute them with milk, vegetable or meat stock (dilute half a stock cube or 2 t of stock powder in boiling water and allow to COOL) and in some cases even with water. c)Keep in mind that smoothies made with fresh fruit, full cream milk or yoghurt or even ice cream, will provide him with protective nutrients such as vitamins and phytonutrients. If you actually consulted a registered dietitian about the thickener, then it may be a good idea to contact her again for recipes. Also contact the companies that manufacture the thickeners such as Nestle, who make Nutren, for product advice and tips on using them. You can phone Nestle at: 1-800-422-2752 or send them an e-mail if you visit their Website at: http://www.nestle-nutrition.com and click on 'Contact Us'.
I hope that you will manage to prepare meals for your dear brother with a consistency that helps him to swallow more easily.
Best regards
