Basically butter is regarded as less healthy than soft or tub margarine with a high poly- or monounsaturated fatty acid content. Butter is an animal fat that has a high content of the so-called saturated fats and also of cholesterol which are both linked to raised blood fat levels and heart disease. On the other hand, polyunsaturated or monounsaturated margarine contains fats that protect the heart, BUT only buy margarine that is soft and is sold in a tub. Block or hard margarine is not healthy either and may contain potentially dangerous trans-fatty acids.
