What is the shelve life for bottled pickled fresh water carp and would nutrition value be the same after seven years

March 2006 I cleaned, fried the fish and bottled it in a pickle sauce consisting of fried onions, vinegar, sugar, Masala and spices. I made about 10 of the medium size console jars and stored it in a cabinet underneath my bar. I tasted some and it tastes great and I am still alive. My concern is nutrition value and how long the remaining 9 bottles can be kept?
